T500RS rally style paddle and pedal mod ideas/solutions?

Would it be possible to modify the T500RS paddles so that pushing the right one away could change down a gear? e.g. so you could change up and down using only the right paddle as in a WRC car) Also would it be possible to do this sort of thing (http://playseat.com/shop/accessories/logitech-g25-break-pedal.html) with the pedals?

I doubt it, unless the game itself supported that function.

The only way I can imagine it working would be through some kind of connection between the two paddles across the back of the wheel (so that pushing the right one would pull the left) but no I was just asking in case anyone else was contemplating doing this...

yeah, the paddles as they come on the wheel do not travel away from the driver, only toward. Sounds like a pretty complex and warranty-sacrificing endeavor if you were to do it properly.

to answer your other question, I suppose you could have a single plate machined to mate onto both the brake and clutch pedal arms. However, the brake pedal is much more resistant to travel than the clutch pedal, so if you didn't press such a pedal down a specific way every time, you would probably get a lot of undesirable torqing force between the plate/pedal arm/screws. My impression of the metal parts of the assembly is that they are pretty soft and would not hold up to that kind of modification for long term.
