Being the car enthusiasts that we are, I'm pretty sure most of us have watched a lot of track day videos on youtube featuring our favorite cars. What I think would be interesting is if PD created a mode that emulated these types of events. More robust than just "free run mode" where you race against other AI for an infinite amount of laps, this mode would focus on the aspect of driving with a diverse roster cars on a track than just racing.
It could feature an ever rotating roster of vehicles that enter and exit the pit area - all with different set ups, PP, and AI skill. This I think would be the differentiator that separates it from other "free run" modes. One moment you have the fastest car on the track, the next you could be struggling to keep up with one that just came out of the pit.
Whereas you have specific objectives in other GT modes such as drift and race, track day would encourage things such as "cat and mouse" where the objective is to simply keep up with a car rather than pass it. The greater the divide of the PP, the more points you could earn. Other objectives such as clean passes and general track etiquette would be taken in to account as well.
As stated before, track day mode would be focused on driving aspect, rather than flat-out racing. It would feature certain things that contribute to the "ambiance" of a track day event; such as having cars on the track that are going at their own pace, and it is your duty to properly overtake them.
This mode I think could provide completely random and challenging scenarios without having to necessarily go online. Pardon the rambling, but just some ideas that I have been thinking about for a while.
