Seems like Monaco, Fuji and High Speed Ring are all really smooth.

Nurburgring is worst, by far. The GP/D track may even be worse than Nordschleife.

Where else do you have to be careful to not set up your car too low?

You can set your ride height low on bumpy tracks if you have stiffer suspension. I generally stiffen the suspension and leave the ride height at 0 ... Control the suspension more with the dampers, 8 / 6 generally, seems really nice on every track tbh. My Supras great on nurburgring & Fuji etc.

I'm usually doing fine even with lowered ride height around the Nordschleife. Not lowered to the max, but usually well below the default settings.

From what I've found, slitghly increasing the spring rates (if needed at all) works well enough to keep the car from bottoming out too often.
It'll spray a few spark when hitting the curbs or going over a realyl extreme bump, but aside from that...

I never had issues with it, at least ;)

Because the firmer suspension reduces the body travel / squatting.

Monza is a smooth track ... Deep forest & Trial Mountain are a mix.

A stiff suspension on the tiny jump after the first split sector on the ring and you are out.

Trial Mountain also has a very rough surface.

100% WRONG! All my cars have a stiffer set up and I have no problems going around that corner even when pushing ... Learn how to use your brake / throttle & learn about weight transfer aswell and that corner is relatively simple ...

Yeah, that's why I'm doing it. However, from my experience so far, increasing it by some tiny amounts like +0.3 or +0.5 is enough to keep the car from bottoming out even when lowered.

The spring rates seem quite stiff by default. Suprisingly stiff, in my opinion.

If you don't overdo it completely, stiffening the suspension shouldn't be a problem. Especially if you do it by increasing the spring rates instead of bump and rebound.

Off topic question...how can you tell you bottom out if you cannot see sparks?
Is there a scrub noise? I have hit bottom before and it cause major handling issues..but aside from the major issues, I've never really noticed hitting bottom and I ride pretty low.

Daytona is another rough track.

Cape ring is smooth as can be! As long as you can control a fast car through the last S bend you're set.

The ring certainly has it's rough patches!

Deep Forest is also bumpy.

I've found High Speed Ring and Monza are the smoothest, and as far as city courses go Tokyo RT246 isn't bad either.
