Whenever I pit and rejoin the circuit (in any session) the grip levels are TOTALLY different and i loose 4-5 seconds a lap!

Also my tyres now all become red within a couple of laps which didn't happen before. Is this wear or overheating?

I'm wondering if this is a bug similar to the one which was in GT6?

This seems to really be ruining my longer races. I am playing on PS4.

Has anyone else had this happen?

Your tyres will be cold coming out of the pit, and will take time to heat up. If your tyres are going red quickly, maybe
you have tyre wear (in options) set to be fast

Check the pit strategy and make sure that tyre type and pressure are the same than in the the car tuning screen.
Different tyre pressure after pit can explain lap time differences.

Also if you add 50 liters of fuel when you pit, that also has an impact on performance !

Test with exact same pressure and not adding fuel to see if there is really something strange.

Will try and check this Kefran

I've set the pit strategy back to default and all seems to be well at the moment :)

On PS4 Kefran
