In my experience in R/L and in the game, most AWD STREET CARS or PRODUCTION CARS sold to the public are designed for understeering and stability (since all 4 wheels can spin and none are really dead weight). To purposely lose traction, you can do two things in a stock car
1) turn in like you normally would for a race line, carry more speed than usual than a grip line, and let off the gas.. the car should swing out naturally.
2) you can trail brake the turn hard by loading up the front wheels and go in at excessive speeds mentioned above.. you really have to toss the car around.
If you modded your car, you might want to read up on "setting up a car" and understand what all those suspension and differential settings are really about.. GT3 is pretty real.
I have a WRX that I use for daily driving with HKS coilovers. I also have a WRX in GT3 that is set up the same degree in suspension and power and gear ratios just so I can see how much the game differs from the real life, and I can tell you right now, SONY did their homework.
