And more specifically, how would you pick them in order to comply to the current classes? E.g. the N-series, or Gr.3/Gr.4/etc? Here are the automakers that I really think could use more models:

1. Literally just one car so far despite having more cars in previous installments, at least for some of these. (Note: I'm not going to count the brands made for VGTs, e.g. Fittipaldi & Zagato.)
-Shelby (I'd imagine the Daytona Coupe would be one, plus some of the modified Mustangs we saw in GT6 under their label.)
-Daihatsu (At the minimum, the OFC-1 Concept, Midget II, the first-gen Copen, and the newer 2nd-gen one that the VGT is based on.)
-Infiniti (This one's a little tough since a lot of the notable models are Nissan Skylines. But I'd add the G35, G37, and Q60, with maybe the Nissan equivalent of the G35 being added to show that the Skyline label was still around between the GT-R R34 and R35.)
-Suzuki (The Escudo may or may not be a good fit for Gr.B, but what about some of the neat kei cars that were premium in GT6? Especially the Cappuccino. Plus the classic favorite, the Alto Works.)
-De Tomaso (But let's be honest, is there much else that's as famous as the Pantera?)
-Chaparral (Then again, I think both the cars from the older games would still be in Gr.X - not that I'd personally mind.)
-KTM (I know they only have so many actual cars, but I think at the least, the GT4-spec X-Bow could be added.)
-Mini (Definitely could use the Countryman. Plus maybe a new version of the Cooper S, and the older late 90s model. Not sure what else - maybe a rallycross version for Gr.B? Oh, and we can't forget the JCW verisons, either.)

2. An N-Series or two, and a few race cars.
-Mitsubishi (Maybe the 2nd-gen and 3rd-gen Eclipse, some older Lancers including the TME, an FTO and GTO, plus maybe the i-MiEV. Hey, there's an idea - they could change the BMW i3's class to a "Gr.E" class for EVs with low HP, and could include the i3, i-MiEV, the Nissan Leaf, etc.)
-Hyundai (I think the i20 could be a good idea, or more cars with the newer "N" performance label overall. There's also the classic Accent rally car, and the Tiburon. On a side note, I'd like Genesis to be added in an update, especially the G80 Sport.)
-Porsche (IMO, I'd say mostly more N-series cars could be added from here, as I think the current race cars are perfect for Porsche's representation in those groups.)
-Bugatti (The Chiron is one car that comes to mind, but what about the older cars that were, y'know, actually made by Ettore Bugatti? The Galiber could be a good idea, too, especially if it gets greenlit for production.)
-Citroen (How 'bout the original DS? Also, the SM could be fun, and the C4 seen in GT5/6. There's also the classic 2CV. That last one could maybe even compete with the Sambabus!)
-Alpine (at the minimum, they could bring back the other Alpine that was in Gran Turismo 4-onwards. EDIT: Plus the new GT4-spec A110.)
-Alfa Romeo (I know everyone wants the 155TI DTM, and so do I - but idk what group it could fit in, or if a new group was made, what rules for that group would be other than "older DTM"? At the minimum, I want the Brera, 8C, TZ3 Stradale, all three 1960s cars with ~110HP, and maybe some newcomers like the Giulia Quadrifolio.)
-Jaguar (Lots of potential here. Dunno about Gr.1, though. From GT6's list alone, I'd add the classic E-Type, the XJ220, the XKR-S, the early 2000s XKR, and the XFR. And that's before we get into stuff like the C-X75, or the I-Pace, and other newer models!)
-Volkswagen (I'd add the W12 Nardo, the Scirocco R to compliment its Gr.4 version, the Mk.IV, V, and VI Golf GTI, the newest Beetle, and the 1966 Beetle. That's before we get into stuff like that one Golf where they dropped in a W-engine into it, or the XL1 Sport)

3. More than the above groups, but still room for improvement.
-Subaru (I think the Isle of Man car and the drift-spec BR-Z is a great start, though. There could be the new BR-Z tS, the newer Impreza WRX STI RA, and other than older Impreza models, there could also be the 22B, and the S-series like the S206 NBR Package.)
-Honda (Lots of potential, here, for the N-Series alone. E.g. the S2000, S660, the original S500, the original & facelifted first-gen NSXes, various Type-R cars, the newer Fit from GT6, and maybe the HSV-010 for Gr.2.)
-Chevrolet (My personal picks, other than older Camaro & Corvette models: Chevelle SS 454, El Camino SS 396, Nova SS, Corvette Stingray Racer Concept, and the Corvette Stingray Gran Turismo Concept.)
-Mazda (How about that RX-8? The RX-Vision could be awesome, too, as well as that RX500 concept that was in GT6. There's also the obvious 787B, but I'd also add the Roadster NC, as well as an older "series 6" RX-7 FD to compliment the "series 8" we have at the moment. There's also the newer Demio that also appeared in GT6...)
-McLaren (I'd honestly love to see the F1 LM, as well as the F1 GT road cars. There's also the two FIA GT1 versions of the F1, too. That aside, there's the potential to see the 675LT, 720S, 570S, the 570S GT4, P1, P1 GTR, Senna, X-1 Concept, and maybe some older racing models from before the F1.)
-Peugeot (Other than the 905, there's also the potential for this automaker to get a Gr.B car with the 205 T16!)

You already named them all, I'd just add Porsche...The 956C and a classic 911 Turbo would be awesome

Dodge - 2018 Dodge Challenger SRT Demon Gr4

Hyundai - 2019 Hyundai Veloster Gr4

Honda - 2018 Civic Si Coupe Gr4

Dodge - the Challenger would be a fun experiment in Gr4.

Hyundai - the Veloster would also be fun to see in N200 as well as Gr4.

Honda - the Civic Coupe would be another welcome addition to Gr4.

Come to think of it, I think we did see the Veloster being recorded by PD, didn't we? I'm also not sure about the Challenger being in Gr.4, since that group seems to be limited to newer models that are from the mid-2000s or later. Similarly, I'm not sure about which Civic would be good for Gr.4, even if we were referring to the newest one.

In fact, there don't seem to be many brands not in Gr.4 already - the only ones I think especially have potential are KTM and Alpine. Maybe a Nissan 370Z GT4 could be added, too, (EDIT: Plus a McLaren 570S GT4) but other than those, I'm not sure if we could see additional made-for-game Group-modified cars from PD in updates. Although I'd personally love it, especially for brands that don't have representation otherwise.

Plus I wouldn't mind some GTS-original Gr.3 cars appearing alongside their real-world equivalents in a future title, like the Honda NSX GT3, or the Corvette C7.R GTE.

The answer is pretty much.... everyone, EVERYONE.

Almost every manufacturer has some holes where they should be filled in with some appropriate models.

I'm not saying it should ever get to the point of overkill like FM7 but there's oddities like why there's a Gr4 Cayman and not a road version???

I'm a big fan of sport sedans so for me, they really need to drop these in... there's no reason why there's not a sporting saloon series so that releases all the M5 XF Guilias Mercedes C/E Cadillac ATS etc.

I think one could go on for a while in regards to the N-Series, but I am curious about the main classes, as well. For example, I wonder if the Alpine A110-50 could fit into Gr.3? I think the more recent Aston Martin LMP from the early 2010s could work for Aston Martin's Gr.1 representation, too.

All manufacturers need more, even the ones not in the game yet .
I seriously doubt GTS will hit 500 cars for the simple fact they will be holding off for the next GT. We all know how long PD takes to do things.
Or the final groups of cars will be the redundant similar models of the GTR Skyline, MX5 Miata, and others, though I see those coming in the next GT, not in GTS

I should clarify, I was referring to the newest models for all three cars. I will edit my post

My vote goes to the 2014 Camaro Z/28, 2017 Camaro ZL1, and the new 2019 Corvette ZR1. I know the Vette hasn't been releashed yet, but we did get the C7 in camo early. If you haven't heard about this car yet, look it up it is a beast.

Also I haven't seen Pagani mentioned, the Huayra and Zonda.
