Ever since the update, the track design on Mt. Aso has really sucked, it only makes simple tracks now, not the great twisting tracks it could make before, has anyone found a way to manipulate the creator to produce to nice mountain roads it used to?

You're right its definately changed. I can't get the same kinds of long twisting tracks that I used to be able to make no matter what I try (I've made a few dozen already). I think they've move the areas in which the track will generate away from the hill top and the rolling hilly areas, which was the best part of this theme.

I've also noticed that some combos with 2 or 3 sectors just wont work. A message pops up saying something along the lines of "this track cannot be generated" which is terrible. I mean its random, How can it not just generate something.

I have a feeling these changes are in place to make racing online with these tracks "easier" or less painless, Which I can understand, but I really miss the technical layouts that used to be possible.

I'll end by saying Mt Aso Used to be my favorite theme, but now I'm leaning towards the Eifel theme.

The max corners I could pull off of Mr Aso post-update was 33.

Eifel seems a very all-round theme, from f1 to nordschleife and even a sunday driving road

I've also noticed that most tracks now start from the top.
Also, from a guy who uses this theme for the jumps :p , there aren't that many exciting ones now.

EDIT: I've been messing around with the course maker this morning and it seems like this issue has been resolved (maybe in the 1.07 update). I tried quite a few layouts with 2-3 sectors and they all worked.

Can you get tracks with a length of any more than 2 miles again?

No the length is still pegged at 2 miles or less, and the layouts are still not as complex as before the update.

Maybe I should explain the issue better, a while back some combos using 2-3 sections simply wouldn't work, an error message would pop up saying this layout cannot be used (or something like that), and I found I had to use more sectors to avoid this. But now it seems like this problem has been resolved, all of my 2-3 sector tracks work fine now.

I saw that error also when trying to generate a two sector course in 1.06, but haven't tried course generator since 1.07 was released.

Yeah its a but rubbish now. I liked doing 2 sectors here and now they are horribly simple and all the same.

I used to love Mt. Aso. If you'd like to see what it could do before 1.06, add me (I'm only on Friday-Sunday). I have my best (and only remaining) pre-1.06 Aso course shared now as far as I know.
