Wheel settings for Fanatec GT3RS (PS3)?

I really want to love this game, but then I drive cars like the Lotus Exige which float all over the road and just won't go where I point them.

In hopes of fixing this, does anyone have any wheel settings they recommend? I generally use 900 degrees but I'll switch to whatever stops my Exige from feeling like I'm steering a yacht.
 
Bumping 'speed sensitivity' in wheel options and 'steering lock' in car tuning menu helps a bit, but not enough for me to keep playing this game.
