It was a replica that had few modificatons too it, the body wasn't that different though, but don't expect a real GT500 to come with nitrous injection.
 
the gt500e that im talking about is the modified gt500 from gone in sixty seconds..thats why theres an 'e' at the end for eleanor
 
The one used for the chase in Gi60s was a replica GT500, they didn't destroy a real 67 GT500 fastback. To the best of my knowledge there were no production GT500's that were the same as the one used in i60s for the ( it was a real one in the non-action scenes), that was a modified one-off for that film only.
