Why does burnt food taste so good?

The best bit of melted cheese on toast is the small bits of cheese nearest the grill that get burned. That is not an opinion. That is scientific fact. (There is no real "evidence" for that, but it's scientific fact nevertheless.) Next time you make a cheese toastie in a toastie maker, try putting a small amount of cheese on the outside so that it burns onto the bread... (you can thank me later...) Similarly, the burned edges of bacon fat are the most delicious bits of a bacon sandwich. And as for char-grilled food on the BBQ, well that goes without saying...

So the simple question is, why does burnt food taste so good?
 
Because it's even more un-healthy than just Grilled...

Obviously...

(And I am not kidding)
 
I'm unlikely to be making a cheese toastie anytime in the near future.... but, i'm sure burnt things taste better because carbon just rules 👍
 
I've heard BBQ'd food is the worst kind to eat if it's burnt.

I love the rim of a pizza especially if it has a slight burnt tang to it.

The square root of the ratio of burnified area to total foody area, multiplied by the second derivative of the crispiness = 1/2 the absolute value of the tastiness

Naturally, increasing the burnification and crispification will improve taste.

I believe this formula was first discovered by the Swedish Chef.

I'm the opposite – everything burnt to me (except marshmellows) tastes like total crap.

Same. I can't stand burnt food.

The closer to raw the better.
 
It depends on the amount of burntness. Like with the cheese sandwhich's yeah its good if its burnt a little, but BURNT food is disgusting.

I like my hotdogs cooked slighty burnt, gives it more flavor IMO.
 
There's a difference between caramelized "burnt" and total carbon burnt. I can't stand the latter.

Exactly, most things have sugar of some sort in them, and when that sugar gets burnt its "caramelized" which is just down right yummy. However if you go too far beyond that you get plain old burnt which is basiclly just coal and not yummy or healthy...
 
I made a grilled cheese sammich today and the cheese leaked out and got burned onto the sides of the bread. It was so delicious.

The only time burned food is bad is when the food is fish. Burned fish = Barf.

You're wrong, by the way, nothing burnt tastes good. Slightly browned, maybe. And this from a guy that LOVES Cajun blackened steak or fish.

(BTW, if blackened is overdone, it will be burnt, and it's ruined.)
 
Maybe cheese and bacon taste good burnt but have you ever tried burnt meat, bread and whatever? Taste not good! + the fact it's unhealthy too, calorybombes! makes me tell you to keep away from burnt stuff 👍

'Tis a fine art, too much charring is a Bad Thing. The Grill Masters know this, and we pass down our sacred tradtions of barbequing over a beer and smoke.
