Depend on a lot of factors. Do you run on mere consoles or do you also race on the ultimate racing platform?
Not all console racers let you adjust steering lock. F1 is perfectly fine with a 380 mm rim if you can limit the steering lock accordingly
Then it comes to the ffb wheel itself. I never thought the G27 could cope even with the stock 270 mm rim. Just to weak. But you would still benefit from the extra precision with a larger rim and if you don´t care to much about ffb G27 is easy to operate with low internal resistance. I am not faster with my loved T500RS then the G27 it just feels a lot better.
I have a 270 mm f1 rim and a 320 and 350 mm for my T500RS. 350 mm rim for rallying it´s a bit bulky and so is 320 mm as we don´t really need it for leverage even on a T500RS so there I would recommend smaller rims but on cars where you really have to balance the car through corners and that is not just point and shoot F1 style I do feel the 350 mm do have a small small edge over the 320 mm.
But I mostly preferr it because I am in a stronger ergonomical position with it and the T500RS get smoother the larger diameter rim you run so it feels better. But ffb is of course the same since all my wheel weight about the same. But the leverage make them feel a bit different and also the different grip and material. I have rubber/suede/leather on my three rims all distinctly different grips.
It´s a lot of fun being able to switch and it made life a lot easier in GT6 which have so many different type of cars and being locked at 900 or if it´s 1080 degrees in simulation mode the 350 mm is just to bulky for KART or the redbull prototypes for example.
T500 RS is bulky on it´s own and get bulkier the larger rim you put on it of course. But since I race on a 51" TV I have no problem that part of my view is blocked by the wheel. Just feels right. It also mean that I wish you could remove the steering wheel in the cockpit view as it get cake on a cake.
So it depend. I know people running both 320 rims and 350 mm rims on their G27 and is happy with that and would never go back. But generally those are not into F1
