I don't know if anyone else has done this, but it's a blast.
I drove past one of the racing schools the other day and I saw several other online player markers on the track. But when you are actually doing the school events, you are put into a kind of special environment with no online interaction.
I eventually figured out that they simply found a way on to the track during free roam.
What resulted was a high speed version of bumper cars and was a blast!
Since then, I can pretty much go online and find people at one of the racing schools doing this.
The best in my opinion, because it's the largest, is the one at the top of Hawaii, near the airport.
The road in front of the school has a long row of barricades that face the highway.
But you can get onto the track if you go all the way to the left (when facing the school from the road) and you will find the entrance along the side.
I've gone there several times and been alone and just done high speed runs and donuts for a little bit and the people invariably start showing up.
So, if you want some mindless fun, make your way there for some bumper cars at 200mph!
