Can you drive all the cars out of the box or are they locked until you play career or something?PS4

Do you have to unlock them with credits or in-game currency?

Can you drive all the classic cars at once? If not, how do you unlock them?

You can drive all cars immediately

They can be driven in Grand Prix mode, time trial, championships, etc.
The only mode I can think of that they can’t be driven in is as the main car in career mode

You can drive all of the cars. Even in career mode as you can sign for any team.

Well, most (if not all) appear in career mode as various extra challenges.

But yes, in career mode, you basically only drive the modern, newest cars for each team.
