For example I do all the races separately in a champoinship, is there a way to still get the gold for this event or do I have to redo the WHOLE thing in order to get the gold.

You need to do the champioship

Simple answer: No. You must do the entire championship. If you don't get gold on a particular race you can then go back and beat that one on its own.
