Because, you can get rid of evidence, and alter the entire flow of a thread. Take, for example, somebody loses their temper and flames someone else, and then goes back and deletes their posts before a moderator can get to it. Now, the moderator will have no proof that the person even posted in a thread, and they won't be able to even begin reprimanding the user.
