I was lucky and after years of driving with a DS3 I started the game with the DFGT and the transition was seamless.
I would not recommend starting with driving aids though other than ABS=1. The steering/throttle/brake inputs are different with SRF and other aids on, so all you'll be doing is picking up habits you're going to have to unlearn. I know because that's the mistake I made, and someone mocking me for not being able to drive without aids engaged my ego and I never used aids ever again after that. But I had to unlearn some bad habits to do so.
I say start off the way you want to race and stay that way. If you want to learn to drive without aids then start that way. I would also suggest hooking up with a garage and finding some tunes you like because you want to be sure and take the car out of the equation as much as possible. You don't want to be fighting a bad tune while learning how to drive. There are plenty of garages around, just try a few tunes and find some you like and use them to learn how to drive.
One other thing, if you intend to race online, then practice online, because the physics are different. It's less forgiving online and again, practicing offline will require retuning and unlearning when you go online. Set up your lounge with tire wear on and grip to real and have at er'.
