does the logitech g27 wheel fully work with gran turismo 5?????

Last time.

It works like this... if you set to manual and use paddles, you'll be paddle shifting, if you use the shifter you'll be stick shifting, and if you use the clutch you'll be using the stick shift with the clutch. Once you've started using the clutch you have to use it until you leave the stick in neutral and use a paddle, them you'll go back to paddle shifting, and you can change up any time you like. If right off the bat you want to use the clutch, then just start off using it. It's just the way the game handles all needs for all users.

What if you're using the clutch enabled (you have to use clutch) but you try to shift without using the clutch? Will the shifter not move? Or if you muscle it to try to move it will it eventually move?

The car will stay in neutral with you revving the crap out of it lol. It's like trying to do it in a real manual car, if you go to shift it will grind the gear and you'll be back in neutral until you clutch in and shift.

What if you use brute force, will you break it if you don't use the clutch? Or will it just give out if you pull/push hard enough? Also, what if you're already in gear, will it just stay in that gear unable to go into neutral?

There's is no Force feedback for the shifter.

Physically you can do what you want with it.

You can go from 6th to 1st no problem in GT5 with no damage. That's a limitation of the software not hardware.

As said before GT5 puts you into neutral if you miss shift.
You have to physically move the shifter to neutral and clutch/re engage the desired gear.

Overall quite neat.

no, once you have pressed the clutch if you decide you want to not use the clutch. Simply use the paddles once and you no longer need the clutch to change gears with the stick.

Very helpful tip. I ordered my G27 3 weeks ago and I probably won't be getting it until the end of May! Oh well, the game is still fun with a ds3 controller.
