you could also go with a Viper ACR, 430 scud, LP670-SV, SLS or an LFA,
the LP670s wing calms down the snap oversteer of the LP640 quite a bit.. mind you if you over drive the car it will still bite back but only if you REALLY force it into something, ive had one of these since my early days playing and love it to death.. the murcielago is a sweetheart on the right track (heres a tip, do NOT try an LP640 on a banked or tracks with off camber corners.. it WILL kill you.. ive never seen a mid engine car that wants to be front engined so badly.. the LP670 on Daytona online at least is another bad news car)
The SLS is also quite quick, it doesnt excel at any one particular thing but it is quite stable and forgiving.. not to mention its cheap
The 430 scud and Viper ACR are both direct handlers that are very docile, mind you neither one is very potent on the top end, so theyll get killed if you use them for daytona, Circuit De La Sarthe and the like... but around something like Grand Valley or other technical tracks these two are forces to be reckoned with
LFA- put this on sport softs, and you will have the most direct, sharp, visceral, forgiving experience you can get out of a super car, even over the online curbs it wont slip, its very well balanced, and my Pearl Red one is a frequent online track day attendee, take it anywhere and be rewarded, Lexus did a great job on this one
