Aside from the obvious heavy hitters (NSX, FD RX-7, R32/R33/R34 GT-R, 3000GT, Lancer Evo, Impreza WRX, Supra, etc..), I've always had a soft spot for the '97 Toyota Soarer (aka the Lexus SC300). It's kind of a boat, but I think it's just enough of a boat to counterract the fact that it's a relatively powerful FR car. As a result, I thought it was pretty easy/fun to drive!
The '97 EK Honda Civic Type R is another favorite - I don't usually go for hatchbacks, but I love throwing this car through the turns and winding it up to about 9,000!
I like the Nissan Stagea Autech too just because it looks ridiculous, but it's fast (especially mine, which is painted yellow - but I needed to buy the other Stagea to get the yellow paint chip for it).
The Nismo GT-R LM Road Version is also a brilliant car, though I'll admit it probably doesn't count since it's basically a race car...
