Open up the pedals by removing the screws on the bottom of the pedals. Then turn it around and remove the cover plate.
Under the brake pedal there is a potentiometer that is probably dirty.
Clean this potentiometer by spraying a bit of plastic friendly contact cleaner into the holes on the side of the housing of the potentiometer. Move the pedal a bit, let it dry according to the instructions of the contact cleaner used. Then move the pedals more. Hook up the pedals to the wheel to see if the brake is fine now. If not repeat the process. If it is, put on the cover again (be careful not to crush any cables) and screw it back up tight.

Does this simply mean the potentiometer got loose by any chance and moved slightly? Or what is the thump sound originating from?
Nah the thump sound is just the sound you hear when you suddenly release the load,I have no idea what was the Problem that caused it but when you suddenly release it I am guessing that re adjusts the Spring in the Pedal.

I've been having this issue for a while... Reconnecting the G25 and recalibrating would fix it, only to get it back later. I tried cleaning, I tried adding pressure to the spring by inserting a washer but nothing.
Then today, I disassembled it again and found that the potentiometers have a little bit of slack and can move on it's axle. Which explains the solution of suddenly releasing the brake. It shakes it into place.
Here's the video of how I identified the issue, and even managed to reproduce it on the accelerator as well:
So I ended up finding a small bit of slim plastic that I inserted into a hole in the pedal frame on top of the potentiometer, twisted around it and down, and that did the trick. It's not budging now!

VileFCboyDo you know if this applies to G27 pedals as well? There is no problem with mine is just that, I dont know if the potentiometers are the same as the G25 pedals... which I highly doubt.

Pedals are the same mate.
Actually the G27 throttle is slightly out of sync mounting wise to aid heel and toe.
Mechanically they are the same.
