When you look at the patch notes in the game, not the website, they left out a note that didn't make it in this update:

6. Scapes
- "Abu Dhabi" is now a featured Curation in Scapes.

It seems like they wanted to add more Abu Dhabi Scapes, but it got removed. It probably got cut due to the cancellation of the Abu Dhabi GTWS event.

Apparently seems like they already removed that line from the in-game version of the patch notes?

The old & new comparison shots look pretty much identical to me (barring some lighting due to the slightly different weather) so I think it's just placebo wishful thinking.

From what Digital Foundry have said about the upgraded PSSR in the new ResEvil and other games it is a massive improvement and will be immediately obvious. There won't be a need to check tiny details. That's why I don't think it has been implemented yet.
This article says GT7 has the new PSSR but I trust you guys more (and I don't have a Pro myself).

Took them a while  I did Race B last night and wondered why this PD-original track still has very obvious Michelin branding.
On the subject of DTS getting updated billboards, the big Michelin branding near the end of sector 2, before the coast, has been, oddly, replaced with the Gran Turismo logo instead of Dunlop

That article is just quoting the same neogaf thread.

I played quite a bit last night. Tried 60 fps and 120 fps modes. Tried the “Prioritise ray tracing/graphics” and “prioritise frame rate” settings. Didn’t notice any changes from before the latest update.

I don't think people quite understand what "PSSR 2.0" actually will do. It's not just fixing small issues like the shimmering. This upgraded version of PSSR is supposed to be nearly on par with PC upscalers like DLSS and FSR. This is from DF's review of Resident Evil Requiem with it:

Ultimately though, from what we've seen so far, the new PSSR - certainly as presented in Resident Evil Requiem - feels like ML upscaling is finally where it should be on PS5 Pro. It's delivering sharp, stable and convincing 4K imagery from around one quarter the native pixel count, it's competitive with PC equivalents and represents a big, big improvement over the PSSR of the past.
Something like that would be immediately noticeable.

Am I losing my mind or has something happened to increase understeer since the last patch? Everything I drive seems to want to pull towards the barriers, even cars I've driven over and over in the past.

EDIT: Out of interest, I loaded into a time trial and experienced masses of understeer so tried re-loading the same event. The car turned in much more sharply the 2nd time I loaded the event. Something definitely feels off to me.

I don't claim pssr2 is already in gt7 as I dind't notice difference on gaf screens but also pssr1 is decent in gt7 so don't expect dramatic results in gt7 as for example some ue5 games probably get. There is no characteristic pssr noise in gt7 as in most ue5 titles.

In any part of the game where BoP is enabled, a new scales icon appears to the left of your car. Times set with BoP on will also display a scales icon.

In addition, the leaderboards have received new filters for each group with BoP turned on. The times set won't register to that part of the leaderboard if BoP is turned off.

Undocumented Change :
PSSR2 has/must have been implemented.
Or : PSSR1 is/was deactivated with the latest Update.
The Image is crystal clear and razor sharp.
No more pixelated fencing or other fine details which looked washed out/blurry.
The perceived Image is Night and Day compared to prior Update 1.68.

My PS5 Pro hasn't received the upcoming System Update yet, so Console side/Software I don't understand how this is possible as of now.

The RT Effects seem to have been toned down to a bare minimum too.
Very noticeable during Night/darkness.
The Headlights reflections on the rear of the car in front of me look quite different compared to pre 1.68.

Fingers crossed that once the PSSR2 system Update is installed, we'll get them back as they were before.
Because honestly it looks gorgeous even as it is as of now.
Unbelievable.
