gt5+steering wheel= how to on headlights!?

In daytime you cannot have the lights on. (Only flash lights on premium cars)

At night they turn on automatically.

Well sometimes it decides to turn them on when you don't really need them, so I turn them off, I use the DFGT though so I couldn't tell you what button it is on the G27.

Go to the options and wheel button configuration. If it's not set, select a button and the appropriate command.

You can't assign buttons on the G27, so the only buttons that work on the wheel are the one on the left for looking behind you, and the one on the right for flashing your high beams.

We may get a patch that lets us assign the buttons how we like in the future.

That is how my G25 works too

For G25 and 27 users you can use the buttons on the gear shifter (the ps buttons) and Square and X is normally unoccupied if you set it up with the Driving Force Pro options.
