I was thinking RUF because Poseidon (for or the ocean I think) would drive 1 of the 3 1 being the whale tail (yellow bird) 3being the other three in the game (I think there is four total.

Probably is maserati because of their logo and the fact like you said that only one is in the game.

Well, Poseidon in Greek mythology created the horses. However, in Norse mythology Loki created the horses. There was a Mustang concept that had touch-open doors, and thus would be low-key...
My guess is Ford and Shelby. Also Saleen as they made Mustangs as well.
