There's plenty of threads about solutions to this already. I used a fully tuned race modified Z28, that'll cost a lot more than 250k though. Some people have managed to do it with a Countach.
If the Chaparal 2J or Toyota 7 start on the front row or get to the front before you do, give up, you won't stand a chance. The Deep Forest race shouldn't be too difficult, but you'll need to block well at Monaco; the 2J and/or 7 will catch up rapidly during the last few laps.
