How do I back up my saves?

Easiest way is with a USB memory stick. From the XMB menu, under the game tab, go to Saved Data Utility (PS3), find the GT5 save, press triangle to bring up the menu, click on copy and select the USB stick to copy to.

I haven't tried this myself, but IIRC the savegame is tied to a single PSN account. You can not import it to another account.

did this today, only i screwed up and saved old data from my usb to my console and lost two week worth of hard work. maybe this will help anyone else to not make this mistake.
