Drive without brake assist, then use 5/5 default BB at first, go to tracks with variety cornering entry, like Big Willow and Tsukuba. Trail brake as late as possible and make a note of how the car rotate into the corner. Try to push harder and harder with deep braking until one of the tire start to go yellow or red. Which tires goes first ? Rear or front, aim to get them lock almost together on lowest speed braking. I usually aim for front then rear almost simultaneously.
Sometimes on FR car, I would have the rear turns yellow right into the end of the braking phase.
I usually run high BB value on most cars with no brake assist, 5/5 BB used on Lotus Elise CM tire ( replica ), on most FF cars I tend to use 7/10 or 8/10 on high grip tires ( standard brakes ). Racing brakes I usually used 4/5 to 6/8 on some cars with sports or racing tires, comfort tires usually below 5/5.
Lock up or difficulty in braking without brake assist are mostly dependent on the input device. Wheel pedals are know to be bad with pedal travel, feel and stiffness / progression.
I used stick with brake using cross ( face button ), and have never had any issue
