How many gears are best 4 U?

No it doesn't, I'm only using 3-4 gears because that's all you need.
You don't HAVE to use all of the gears.
Take Sears Point with an R390 race car as an example.
It has so much power that I don't even need to touch 1st and 2nd gears.
That leaves 3rd and 4th for most of the track, with me getting into 5th on the straight.
If you don't need to shift then why would you? It just wastes time for every shift that you make.

If I can spin the wheels in 3rd then 2nd is not going to get used because it's a waste of time, and at most tracks if I tuned 2nd to be the same ratio as 3rd then all of the gears would be spaced too close together.

I actually live a few miles from sears point (now called Sonoma raceway) so I know what you're talking about, but I didn't realize it was in GT5 :P
 
Again: the number of gears is directly related to how the powerband looks. Some cars drive optimal with 4 gears, and some with 8 gears.

Statements like: "I save the last gear for top speed" etc is far from the truth.
The thing that decides top speed is Power and vind coofficiant.
Two identical cars as far average bhp output in the used rev spectra and air coofficiant goes will always reach the same top speed.
No matter the number of cylinders, engine volume, weight, superchargers, turbos, engine stages, Sport ECU's OR number of gears.
