I'm wondering if anyone knows how much bandwidth is used during an online race. The scenario is, public room, fixed host, mics disabled, and 12 cars on track.

No one knows probably because no one thinks to look for that kind of information. If your concern is based on a data cap on your Internet Service, then what I could recommend is that you get in touch with your ISP and ask what kind of usage monitoring tools you have access to. You'll likely have access to some kind of rudimentary usage chart that shows how many Megabytes/Gigabytes of data you used over a given time period, so you could judge it yourself with a test run.
Run a room in your scenario for an hour or two and keep note of the time, making sure you don't have anything else using the internet at the same time. Then check the usage monitor for that time period and see how much data it used.
