If you have low level cars for cups like the Yaris challenge or mini cups, is it worth it to just let them go for a fraction to gain more credits or do you just build your inventory in your garage?

Keep them. You really don't get a lot of money and you'll get a trophy for collecting 1000 cars.

You don't need the money.
I've got over 4000 000 and i keep every car i get.

Unless you completed all of the A/B-spec races, keep them. For ex, the Vitz is useless but it help you complete the Vitz cup. Once you done, ask yourself:
Do you care about the "1000 car trophy"? If not, sell the useless cars.
