I kind of had that thought too, but after some consideration, I got to say its about 50/50. the physics are better, and the UCD BS is gone. big improvements! as well as more tracks and cars (even tho some where removed, there is still more.
GT5 had a better online function, better menues, but most important: endurance races! if they fix that, GT6 will be 100% better though.
Content-wise, GT6 is better. However, feature-wise, GT5 takes that spot.

The discussion won't be so much about if X was better or worse, but if X is more important or not and how much. And that is subjective.
For me the driving feel is the most important and physics have hugely improved. You can notice the roll-over for example. Although some new bugs appeared, like the pit/tire bug. The things I can drive and the places where I can drive them also increased, although some were lost.
The things i can drive with, AI and other people, are debatable. AI has more cars on track and it seems slightly improved from gt5 (that is not say it is satisfactory), but endurance races and special events were lost in translation. The option to drive with other people is debatable, you have more restrictions for online lobby but less features like shuffle.
Also the time you need to perform something within the game (loadings) are much better.
There are things I do not consider important, in that they are not important to me but could be important to others: Creditwise the new economy has a "worse standard of living", but i can't classify it has good or bad. The Museum cards, the UCD, the GPS feature (1.06) mean very little to me. if they are in good, if they are not well that's ok.
I'm sure a lot more could be pointed out.
Generally the things that matter to me make GT6 a better game. This doesn't mean is better in every aspect, but overall the improvements have overbalanced the "losses".
Another argument that was pointed out that was very interesting is the how much are the games comparable, regarding to their completeness:
