Well, you would need to have three PS5's and three copies of the game, given that the PS5 can only connect to one screen at a time.
I think the market for that would be very small so it's most likely not worth the effort.
Spent some time on iracing forums last summer, and seemed clear most were using vr or a 3 monitor setup, single screen usage seemed last resort, for nonmt so serious/'dedicated' players.
As for gt7. Guess we'll have to 'monitor' the situation...
I wouldn't expect that.
It would be a radical change on how FOV would be generated (totally different proportion) by the console and to only be used by a reduced number of users.
It's been nearly 7 years that PD chose to not implement anymore the triple screen / multi-monitors option in their games (PS4 and PS5 era).

[PS2]GT3 : multi-monitors support since release (07/2001)
[PS2]GT4 : multi-monitors support since release (03/2005)
[PS3]GT5 : multi-monitors support 3 months after realease (02/2011)
[PS3]GT6 : multi-monitors support 3 months after realease (03/2014)
The sad parts about that are
1) It cost nearly "nothing" to implement a feature like that because the game is natively "network" compatible! One day I've plugged my PS4 on my left screen and I could play on 2 screens on a lobby. The experience was far from perfect because you can't really setup FOV, alignment etc... and I had stuck the analog stick to the left with an elastic band... but the feature is like ALREADY here!
2) Now that GT7 is compatible with motion rig we could play this game with such a high level of immersion <3
I really think it will never happen again on the Playstation platform . I hope I'm wrong.
At some point we had some rumors about a PC version of GT7 perhaps it is the only hope to get back our triple screen support through hackers and modders...
