There's an abyss between the M3 and the M5. M3 handles much better.
Hands-down for me is the Ferrari F430. There's just no other RWD car that handles so smoothly and easily through high-speed curves.

If you're talking about handling, the most balanced car in the game for me is the Lotus Evora, it just blows my mind. The car goes wherever I want it to go as I was using telekinesis. Well, that's before Spec 2.0, now it oversteer a little too much, nothing that I didn't get used, but it was a little better before.
Now, the car that surprised me the most was the Viper SRT10 Coupe. The first time I drove the car was testing it on Nordschleife with CM let's say at 90% of the limit and the car was so easy to drive. In the end I did a 8:10, if I remember well.
