I'm gonna built a website soon, but I don't know whether to do it on GT2, Dodge Vipers, Cars Overall, Sports Cars or Crap Cars (something different )

You could try a mixture. Just make a link to the different topics. I.E one for GT2 and one for Dodge Vipers etc.
