Over the past days I realized that all cars in GT5, no matter whether they are race modified, or have stock or customizable suspensions, all have +0.20 degrees of rear toe as a default value. Front toe is also always +0.00 degrees. This can be changed only after fitting fully customizable racing suspensions.
Positive values for rear toe (-> toe in) stabilize the car, making it less prone to oversteer and less "lively". Problem is, as a default value it's just weird. It's a quite high value even for comfort passenger cars, which usually have half that value for rear wheels. Race cars instead often tend to have a neutral, if not negative rear toe. Yet, all cars in GT5, no matter the type, appear to have such a large value for rear toe in.
Stock suspension setting values can be checked in the tuning screen after purchasing any suspension kit. All cars I checked had a value for +0.20 for rear toe.
I think this must be some sort of bug. Most cars (especially sports ones) are not supposed to have such toe in on the rear axle. Therefore, I think that as a default, they do not handle as intended.
There's also the possibility that this could be a deliberate choice by PD to make most cars easier to handle.
Maybe this could be a question for Yamauchi to answer via Twitter?
