The individual dealer/city menu musics, brochure backgrounds, each dealer having their own tuner and special models section...These are what makes GT1 & GT2 so much more atmospheric compared to later games. Playing GT5/6 is like being in a surgery room Everything is too squeaky clean.

One of the smaller pictures on the left is the one used for Toyota's dealership - with the Altezza on the racetrack. It is from a 1998 Altezza brochure.

There are still a few I haven't found yet - Daihatsu, Lancia, Lister, Mitsubishi, RUF, Vauxhall and Venturi. The Venturi one probably isn't from a brochure at all, so it's even more difficult to find.
