Both, depends on the car. Usually, I have 1 stock, 1 lighly tuned,, and 1 heavier tuned. My cars are mostly pp tuned, i.e., 400pp,450pp,500pp,525,550 and so on.
Stock all the way. I may do some minor tuning upgrades, but only mods that can be removed to make the car stock again. I won't perform massive engine upgrades or body modifications that aren't reversible unless I have multiple copies of the car. Even so, I don't really have the desire or interest to do it anyway.

A perfect example is the Lambo Countach anniversary edition. I got one from a ticket the other day (I'm slowly but surely emptying my truck...) & all I did was put softer sports rubber on. It kept its original handling traits but lost its nasty habits. Gorgeous! 👍
