My favourite one would be the Nurburgring and Circuit de la Sarthe, the former being known as one of the most spectacular circuit noted for the venue of an international touring car competition of Nurburgring 24h, and the latter also being familiar as the site for one of the greatest endurance races in the world... Also I do prefer the layout of the Nurburgring(Including North and the South) because that track sort of tests out all the ability(competence) as one skilled racing driver seizing a grab of the car's handle.

Of course, I too am fond of the layout of the Sarthe as a 6-kilometer long straight always makes me feel that I'm driving the car in a trance as if I'm a speed fanatic.(Not actually I am though)

Surely, the number of my favourite tracks will increase since the new pack had been delivered with a set of some famous tracks, after I check out all of them while I'm to be online again. ;)

Spa is an absolutely perfect track...but me favourites are not in the game anymore, like El Capitan and Autumn Ring, but i've heard rumours about these tracks bein implemented as DLC...? I really hope so (lo) **xy

Trail Mountain! High/med/slow speed corners, long strait, elevation changes, and a monster in the lake :dopey:

Original Tracks - Grand Valley speedway/Reverse. - For me it's a great test track where even slower/lower hp cars can show what they've got. Also it's relatively easy to learn, so you can really use it for comparison.
World Tracks - here I will say Nurburgring 24h, Suzuka, Spa, Monza (variante Ascari - best 3 corners in the world)
And of course - Monaco. :dopey:

But Autumn Ring is in the game

Trial Mountain and Deep Forest and Spa

There easy and fun. I like that.

Deep forest and Trial easy? do you only drive low pp?
Deep Forest especially. I am trying to think of a Corner there where people never get off line and I can't.
Both these track on my favorite list, but not at all because their easy. It's because their demanding technically with elavation change and off cambered corners. I think your not considering your skill and or knowledge of the course. Only way they might be considered easy might be because of their length?

Nurburgring - Just an amazing track that has everything
Spa - Eau Rouge, and is challenging
Suzuka - Love this track more and more. To nail the first section perfectly is a huge challenge, and I still kinda always mess up at the Spoon curves, where I lose too much speed I think.
Le Mans - Fast and technical track

Grand Valley Speedway - Then especially the Grand Valley Reverse track from GT3, such beautiful setting with sunset, especially the left-right S-bend right after the last tunnel.
Deep Forest - Fast and technical track, hard to master

From previous GT games:
Special Stage Route 11 - The GT3 version, never played GT2, so dunno what that version is like. Hard track to master, hard to get the perfect lap.
Seattle - Just love racing on that track

Eiger Norwand, I cant get enough of the landscape and the challenging corners

MoLiEG
Laguna Seca :) I don't know... I just like it a lot :D

Agreed, it's of fair size with a simple layout but still presents quite a challenge, and not overchallenging but not exactly boring either. It's simple fun especially if you don't cut corners

Tokyo R246 is one of my favorites because so many races take place there. I remember when I'd just gotten the game, taking my Lancer Evolution IV there for the compact car race...

Tsukuba's awesome too.

For the most part their original courses and horrid. I really wish they'd focus on getting more real world tracks in the game. That being said I'm really glad Silverstone is coming out soon. I'd love to see more F1 courses overall.
