I can get a Toyota Yaris (Vitz), fully tuned, to beat a Dodge Viper GTS on T5 Medium tyres (both driven by me) around SSR11 Reverse. That's quite good fun, actually.

Well wow I guess... I dunno... I never bothered to go against such odds but then again... I'm not too big a fan of FF cars (but given all this talk and other thoughts in my head I may actually bother to try them on some searous level (again) when I get my hands on GT3 in a few weeks...) but admire them for what they are I guess. Sorry if that failed to make any sense...

I suggest you go back and watch the replay. The AI's power is handicapped when in beginner mode. You'll notice that the AI throttle never gets past 75%.
Also, the AI are aren't exactly spectacular when it comes to racing, especially in beginner mode.

I'd have to agree, the AI is not exactly a hard opponet once you figure how to drive as fast as you can around a given course. Unless their car is more powerfull by a large margin, maybe then you could start to worry, but for the most part they can be more or less dominated. Begnner mode is very...very easy... it was the case of a better driver, a much, better driver or so I figured, but something tells me by now wellyrm that you've figured that out. Der Alta Famine and a few others more or less have said what's needed to be said too.
As for the term ricer, it's more on emphasis on show than go. As Socahota said, Ricer's are usually an generally having cars that look too much better than they could be dreamed to perform of, but the only certain way to tell is to 1- maybe take a look at what's under the hood and 2- see how it actually performs on track, given a dragstrip, oval or road course.
The Integra DC2 by no means can really be called a ricer unless it has overdone external changes al La Fast and Furious (apologies to any and all fans of the said movie serries) or Need for Speed Undeground (am I the only one to have noticed in one of their earlier games, High Stakes, there was a 'ricer' and a 993 Porshe 911 turbo at the start.. the 911 turbo got away on the start and the 'ricer' broke down before it got a foot...and look a few years later...isn't it funny even a little?...) or even worse somehow.
Calling the DC2 or even an EG (or earlier like a CRX) is kinda unfair unless you can see what it can do on the track given the driver and to what kind of tuning it's underwent if any, then one can define if it's a 'ricer' or not, it really depends. The driver however in the end is usually the biggest factor, if he/she can push that car like hell and know it's limits, given it's on a specefic course, the opponet car makes little difference unless it's the kind of machine one would know you could not defeat if the driver of THAT car knows just his/hers as well as your car (even the Escudo can corner well if you know what to do with it...I saw Gabkicks do it on Complex string and I will want to try myself if I ever get a chance...and maybe try a EG while I'm at it...), even then you'll never know till you race.
If noting else, you went against the AI on a preaty crappy strengh, a challenge maybe would be going against a similar set of cars on Amatuer or Professional leauge, I tried a rally race with a Trueno 86 on Tahaiti Maze with 245 bhp against a Lan evo 7 rally car...I think it was either medium or hard difficulty (3 or 5 laps I think...) and it was fun, challenging and a little fustrating but it enforced a bit more of what I already knew and my skills are a little more better. Point is, it's possible to beat a higher powered car if you're a better driver and the AI is not the sharpest of tolls and it dosen't make much a differnece what car it is...not too much...
I guess I said too much... hope I made an actuall relevant point...
