Yes, it's a bit of a first-world problem, BUT:

When playing GT5 with Sony's wireless stereo headset, I notice that the sound frequently 'pops' every few seconds, as if the sound turns on and off for roughly a millisecond. This popping issue only occurs when playing GT5, and does not occur in any other game using this headset. The popping also never occurs in GT5 when not using the headset (using the TV speakers). I'm guessing that the popping noise has something to do with the heavy CPU load GT5 puts on (as evidenced by the framerate issues with particle effects or many cars on one screen).

Does anyone else have this problem with GT5 or other games?

I'm not sure this is a problem for everyone. I have the same headset and don't experience the problem with sound you describe; whether online or in GT Life

This happens with twisted metal but with the tv speakers, the last update for the game seems to have fixed it tho ** TM not gt5!**

I have the same problem with my headset and sometimes it will make the popping sound a bunch of times then cut out completely, and I can only hear myself, then after a few seconds I will get sound back. Also I haven't had any problems with other games so it's definitely a GT5 problem.

Could be the headset. Do they only run Bluetooth?
I've got an astro a50 wireless headset and gt5 would be the game to make it pop and it doesn't, so yeah could just be that

Or it could be some of your sound setting are wrong. If its running through optical make sure it's only set to Dolby 5.1.

I have had this same headset for about a year, and haven't ever experienced this problem. It could be what jordy said, check your GT5 sound settings are correct.
