I've been noticing this with the F1 cars lately - more over the F2010 and F2007. I'll be going around a sharp corner and moving the stick all the way to the left/right results in my front tires "turning red" on the little tire display.

Is there such thing as turning too much? Or is it just my suspension settings/steering sensitivity (currently at 6)?

Sounds more like you're asking your tyres to slow down, avoid locking, and steer at the same time. Tyres aren't capable of so many simultaneous processes and as a result heat up. (Turn red)

I'm not as good with the Ferrari F1's as I am with road cars and usually end up braking too late and end up steering at the same time.

BUT it also happened on Spa in the chicane before the start/finish line - I go to make a sharp left for the second hairpin and my tires suddenly heat up. No braking at all, just a little bit of throttle.

This is the answer your seek. Also see below.

Friction Circle

Also you might try decrease the sensitivity of your Limited Slip Differential, too much on the Accel and you will get alot of wheelspin (if not running aids) but turning down the Decel will help too, but too much it will get squirly under braking.. Try 21,17,9 on LSD
