Either way you do it is fine. The best way is the one that suits you. The signal is digital throughout, so there are no losses involved. That way your cutting out the 'middleman' (the tv) on the sound signal path.
But you should not see/hear any performance difference either way. Purists may beg to differ.
You should have no problems with everything detecting the cables your using, as long as you switch to the right source on sound system when your using the PS3. Optical inputs may need to be assigned to the correct source on the AV receiver, but without knowing your specific setup its hard to say. Just plug it all in and see what happens. She'll be right. 👍
