In GT4 I even got the lowly Cadillac Cien to 288mph. No cheats.

I got out pretty easily, but the surface counted as runoff area, so I couldn't go very fast.
What's the trick to it?

I have no idea why you couldn't go very fast. I finally figured the Motorsport bug myself just now...it's weird, man. I always thought the mountains would get closer once you're off the track but nothing like that happened. I got an Audi S4 up to like 204 mph, though! After a minute or so, my car vanished, too.

I think there is a post that states that when racing motorsports land your disappears when you reach the edge and you re-appear on the track. But don't quote me on it!!!!

Yeah, that's what happens: you get off track and you can race around but the landscape doesn't get any closer. You can spin out, turn around, and head back to the track if you want. It seems the longer you stay off course, the more glitchy the whole thing gets. My car disappeared, though I could still hear it and it was still accelerating. And every once in a while I could see the Motorsports track go ‘blink’ for a split second. After I hit my Audi's top speed, I decided to stop...afraid that all the glitchiness would somehow affect the rest of my game!
