How do I keep from updating to 2.12 (Stop at 2.11) or how can I get back to 2.11 if I update to 2.12. I am starting from 2.0 (I think). I haven't played in a long while.
Yes, you stop at 2.11. 2.12 is the last update. If you have not updated in a while and you are below 2.12 (As 2.00 would suggest), when you load the game (if connected to the net) you will be prompted to install 2.12, hit yes, if there is more then 1 update to install, let them install, all except the last one, simply canceling it while its downloading before it installs.
If you have already updated to 2.12, you need to delete your GT5 "Game Data" in the PS3 "Game Data Utility" then when you run the game it will ask you to install 2.12, select Yes, you will have about 24 updates to install, this takes a bit of time, monitor it because to stay on 2.11 you have to cancel the last update same as before while its downloading before it installs.
