I do, it was also in GT2 if I recall correclty. It was a fun track to race on, come to think of it, I think it losely resembled Fuji or some track in japan (can't recall exact name) and emphasis on lose if anyone looks at Fuji and high speed ring. As the name implies, it's more for actuall racing than really drifting save for a few turns, I wish it was in GT3 but oh well, I hope it'll be in GT4 somehow along with a few others I miss.
As for my own favorites, I try them all, but for me I'm most comfortable drifting on Speical Stage Route 5 (foward and reverse dry), Rome Circut, Midfield reverse, Trail Mountain, Deep forest, Speical Stage Route 11, and Grand Valley. Rome is prob my current top since I'm the most comfortable with besides SSR5.
Courses that demand skill even though I don't always enjoy driving on them (I may drive very fast on them drift or grip but I don't always find enjoyment in them) as far as drifting goes is Apricott Hill (sorry for the mis-spell) Toyoki R246 and Laguna Seca.
I'm good at racing around them reguarlly, and hell for the 1st and 2nd I'm good at drifting (3rd too) but for some odd reason I'm not comfortable drifting on them.
For Tokyo R246, you need to know just when a corner comes up on memmory more so than sight, I say that becuase the guardrails/barriers have a similar color to the pavement, meaning it's sometimes difficult to know when to start skidding or not unless you know for sure what a turn is. A perfect example is the 1st turn, a 90 degree right hander, this comes after heavy braking, you have to percisely know just when to brake and start skiding to clear such a corner, too soon and you'll either hit the very entrance of the apex or hit the wall before you even start the turn, too late and you have would-be tires to slam into as you lose control. Next is the 90 degree left turn followed by a sharp right bend, you need to show caution going into that turn, I've found myself hitting the wall on the apex when I thought I was going to clear it, the key to that is to purposely miss the ripple/rumble strips on the inside and setup the right way for the next turn. That's just 246. This is a bit to say from me becuase for other cases if I'm just racing, I can go thru this course taking the fastest line possible, its when I try to drift in that course, foward or reverse I run into problems. It's one I have yet to conquer due to time constrictions and other crap (I write and draw also so I don't want those skills to fade ever...and many other things), it's prob good since it shows if you can navigate a street in the middle of Tokyo, and it's high speed for the most part. Not always enjoyable but still good.
For Apricoott hill, there's no real problem, it's just a little resent I have yet to get over when I lost a race on hard difficult (arcade) on that cousre and also because of the double apex left turn, it was annoying as hell in GT2 and I was not in a good mood for it in GT3. Today I can drift thru it not dropping below 50mph at the least, fastet speed out of there could be maybe 70mph. And just the simple fact I'm not too big a fan of that track despite just how great it is, I just don't find too much enjoyment in it myself. However I will not deny it is a test of skill as I've been able to clear a lot of corners at VERY HIGH speeds with a variety of cars. With the Corvetten (Z06, Grand Sport too) I could enter and exit the tight right haripin after the fast left hander between 20-60mph depending on just how I want to drift it, my slowest apex speed is maybe 20-30 due to how sometimes I enter in at a very steep angle. Overall it's very good cousre to test your drifting skills.
Laguna seca is a track I'm too famialr with becuase I've seen it rendered again and again in MANY racing games. CART World Serries, Indy Car 2, and many more, so I knwo the layout by heart, the difficult in this course is knowing just when to start drifting or not as it's not well defined as you would figure for other courses, taking the right line is no more or less diffcult than other courses as far as drifting or racing goes but I can't ofthen find a right grove as far as trying to drift on there just yet. However I will recemond it becuase it can help with your drift control as if you can clear a number of turns without spining out, you can go fast on a lot of places. I've used this cousre a lot in GT3 in the begining to test my various cars (I grew attached to the Camaro Race car and Opel Astra touring car a BIT...I had registered on both 3000+ miles, a lot if you figure I had the game for just over a year... and I have a lot of other crap to do...) for anything. Good to drift on, you may not enjoy it entirely though.
