If you value flashy headlights like I do, go 908.
908 is really fast and easy to drive unmodified. The fact that it comes as a base version is nice too, at least means you can personalise the car a bit. I'd suggest a Group C car like the Sauber C9 or the XJR-9 if you need more straight line speed, if you're more interested in something easier to drive and quicker around the corners stick with the newer LMP's like the 908. The Bentley is good as everyone has mentioned, although I'm not a fan of the huge HP increase it has when you purchase it, limited it back down to ~620HP, if you do that, it'll be quite a bit slower than the other cars.
You don't get a HP boost in GT6, HP is pretty much what you see at purchase until you change the oil. I think in GT6 race cars have their actual HP figures instead of that magical boost they got in GT5. I have the Sauber C9 and it's actually worse than it used to be in GT5, power is overwhelming even though it's about 200hp less than it was in GT5. The '05 Pescarolo is a rather fast machine but ugly in cockpit, I'd use the Pug 908 or the R18, you don't necessarily need speed to win versus the AI control and braking will help you win the day easily, that R18 is like a hot knife through butter the way it handles just carves up corners without holding back.
