For cockpits like the Playseat EVO and Vision Racer 3, both high end cockpits, have a bar under the steering wheel that rests in between the drivers legs, which from what I've heard is quite annoying. The only explanation I can think of is for stability, which could easily be countered by putting bars on either side like the Human Racer cockpit, and my future DIY.

While I wouldn't call anything by Playseat "high end," I suppose it comes down to driving style. I lean my knees out when driving, but I've also seen some people who almost lock their knees together.

It seems to be mostly in wheel stands, though, as their purpose is to be small and portable so making supports on both sides would defeat the purpose of their existence. A full cockpit with a support between the legs seems like a bad design.

I always thought the same thing. I believe it's just to make it smaller.

I was going to buy one but the bar between my legs was what steered me away from them, so I ended up making my own out of 2x4

I never quite got that. Do you guys by any chance know how sturdy PVC is? Or if I can make it more rigid?

I would say because having one center bar instead of two lateral bars decreases the materials needed to build it and therefore the price.

I guess is easier to build it that way
By the way most of the rigs out there have that steering bar in between the legs.

Does anybody here own a cockpit from rSeat.net?

While, no center post is ideal...it's not that big of a deal. I double clutch heel toe and left foot brake, and I don't even notice it. I think the center post design is cheaper to make and most of time have smaller footprint. However, if I was gonna go all out...no center post is the way to go.

PVC will give some as it's a water pipe but it sturdy enough you don't notice the wobble that much while racing. I have bought and used this with my DFGT:

I agree about the center post. I have a playseat evo, and have never noticed the center post. The pedal tray is big enough to mount and pedals however you want, so that the post is not noticable. I would rather not have it there, but the support it gives, and the space it saves is enough to justify having it.
