I always heel-toe in GT5P, and I definitely notice a positive effect.. especially with cars such as the Ford GT, GT LM, and Elise.
I'm using the G27 but the pedals are flat on the floor until I find a sturdy way to set them on an angle, so it feels a bit un-natural but its still easy.
off-topic: I hope the gear box can be damaged in GT5 by too much flat-shifting, while flat-shifting still being possible unlike GT5P..
