The 500's interior is lovely,had a good sit in one before and it's a really pleasant, airy place to be. Was impressed with the Mito at the motor show too, typical Italian interior, great leather seats, that "Italian car" smell, great dials - not sure what it'd be like after a long journey but looked like it'd be a nice place to spend time.
Have to say though, I agree with Paul about interior quality. The materials used aren't nearly as important as how well they're screwed together, what the actual design of the dash is like and how good the important controls are to use. The dash in my Fiesta is an awful textured plastic but it doesn't rattle, the design is inoffensive and the important controls (pedals, wheel, gearshift) all good to use. Fair enough his Holden's interior may look a bit naff, but it's the place he spends his time and if he likes it (and the other people who drive them) then that's all that really matters.
Most of you would have liked it though for reasons unknown to me, but let me say, I have yet to find an interior that I like more than my own Ute, except the XR5 Turbo came very close, it was all very practical and sporty, and the gears and clutch were easy to use and sporty, except for one little itty bitty issue, there was almost no room for my knees to move. I drove it for a while, and if it wasn't for the knee room issue I'd like that car very much (I do anyway). But otherwise, my Ute is just as practical and easy to use (except the seats, needs buckets 
) and generally a nice place for me to be because of that, not because of the materials used.
Or better still, if you're just sitting there, hold on to your drink.
