Shouldn't it say 2010, when the game came out? It shows as 2012 now, when did this happen? Spec 2? Is this common practice with companies?

Well if the game is being constantly updated with new content 2 years after release, I guess it makes sense to update the copyright year too.

For as long that they're active online they're gonna update the copyright thingie

Not true, my girl playes Cod MW2 sometimes and the boot up screen shows copyright 2009.

The year has to do with licensing. If they renewed any license or added any new licenses, they need to update the copy right information. GT5 has added new dealers and tracks, so licenses and copyright needed to be updated as well.

As Bluntified said, this is common practice for games when they have things done to them that require updates to the licences therein. For example, when the PS3 version of GTA IV was updated to allow the expansion packs to work with them, the copyrights were updated because they had to be.
