Let's say you just can't figure out where the best braking point is for a particular corner on a particular track. If you had the data logger for a driver that was good at that track, you could see where his braking points are and maybe able to help your lap times.

Also in real life, they are used to determine the best way around a track. Comparing braking point, turning points, accelerating points withins certain sectors, you can narrow down where the best lines are at a track and dramatically improve your times.
